No-Knead “Everything” Bread

Now I am not typically a “bread person”. I could skip the rolls with dinner and I even rip the bottom half of my hotdog bun off because the meat-to-bread ratio was never my cup of tea. Does anyone else do that or is it just me? However, I can safely say that this is one loaf of bread that I would be happy to eat anytime! This simple bread recipe is sooooo easy to make, and with just a few small changes to the fabulous Sally’s Baking Addiction’s amazingly simple No Knead Jalapeno Cheddar Bread recipe, it’s a tried and true recipe that will be sure to please any lover of everything bagels!

The dough is as simple to make as tossing a few ingredients into a bowl and letting it do all the work on its own! Ever since I started writing, I’ve had problems with painful wrists that some days make it hard to do anything, especially something as strenuous as kneading bread. Thankfully, this recipe doesn’t require any kneading whatsoever, and overnight you will get a stunning, airy, crunchy bread that can handle whatever flavors you decide to put it in! I’ve tried Sally’s jalapeno cheddar version (with my homemade pickled jalapenos, delicious!) and also a plain version, which could be used for any meal or sandwich. I have to say though that the ‘everything’ seasoning really makes this bread addictive though, just like the bagels!

To make the Everything Bagel version, start by omitting the jalapenos and cheddar (Or don’t, lol. It’s your bread! Make it however you want, and you can’t go wrong with a little spiciness and cheese). I also like to add 1 tablespoon each of dried minced onion and dried minced garlic right into the dough. The flavor will really permeate throughout the dough as it rests overnight. The dough will be very sticky and a little wet, but that’s exactly what you want, don’t worry.

Follow the rest of the recipe up until the next day when you put your bread in the oven. Right before it goes in, sprinkle on this Everything seasoning, completely covering the top. Don’t miss a single spot! You’re going to want plenty in every bite.

Everything Seasoning:

1 tablespoon poppy seeds

1 tablespoon sesame seeds

1/2 tablespoon dried minced onion

1/2 tablespoon dried minced garlic

1 teaspoon coarse salt

*And anything else you could think of! This is the basic ‘everything’ flavor, but that doesn’t mean it has to stop there. Get creative. Try a little celery salt for a unique addition, or perhaps some red pepper flakes or chili powder for those adventurous with spice!

These measurements will be enough to cover one loaf of bread, but feel free to double it and save some in your spice cabinet.

As for the actual baking, Sally offers a wonderful solution to those who don’t have a dutch oven (like me for example >_<;), and I found that using a steaming water bath underneath the baking sheet is the perfect way to make sure that bread gets extra crispy on top.

If you or someone you know loves bread, I would 100% recommend giving this recipe a try! I personally have had people rave about it and you don’t have to mention just how easy it was to make. I won’t tell. 😉
